When you have the late-night munchies not much beats a spicy, cheesy, messy, gooey bowl of queso scooped up with salty tortilla chips. It’s extra fun to drop all over your jammies while you sit on the couch and watch stupid TV. The Tipsy Toad version utilizes our Tipsy Toad Salsa for extra freshness. Dig out some cheese, and add some beer to make it extra Tipsy. Have another beer to wash it down. It’s the perfect way to take gluttony and sloth to a whole new level!
Tipsy Queso
A cheesy Mexican dip that takes snacking to a new level.
Ingredients
- 354 ml craft pilsner of your choice Don't be lame… use the good stuff.
- 225 g cream cheese
- 4 cups grated nacho cheese Processed will work but the real deal is better.
- 1 cup Tipsy Toad Fresh Salsa You can use stuff from a jar if you want, but why would you?
Instructions
- Pour the Pilsner into a medium saucepan and bring to a boil over medium heat.
- Cut the cream cheese into small chunks. Whisk it into the boiling beer, continuing to stir until completely incorporated and blended.
- Whisk in the grated cheese a bit at a time until you've incorporated it all. Continue whisking until you've got a completely smooth mixture and the cheese has fully melted.
- Stir the salsa into the Queso. Remove from heat and place the Queso in a bowl. Serve with tortilla chips or veggies for dipping.
