Pour the Pilsner into a medium saucepan and bring to a boil over medium heat.
Cut the cream cheese into small chunks. Whisk it into the boiling beer, continuing to stir until completely incorporated and blended.
Whisk in the grated cheese a bit at a time until you've incorporated it all. Continue whisking until you've got a completely smooth mixture and the cheese has fully melted.
Stir the salsa into the Queso. Remove from heat and place the Queso in a bowl. Serve with tortilla chips or veggies for dipping.
